I know, I know, you are never supposed to try out a new recipe on a special occasion. It is almost guaranteed to fail. I got lucky however, with last night's selection: Mushroom Stroganoff with asparagus and flaky biscuits. Of course, while the meal itself was terrific, a few disasters DID occur. Michael is usually at home at around 5pm nearly every night. Last night he called at 5:20 to say that he was just leaving work and would be home at 6pm. Silly me had timed all of the dishes to be done at 5. Needless to say, everything sat on the stove warming for a while.
The next incident occurred 2 minutes before he walked through the door; the fan above the stove started to leak. It originally had begun yesterday morning. The vent on the roof was leaking water down the fan vent and onto the stove. Naturally I called a roofer. They came out and "fixed it" and BAM, $273 dollars later, I assumed the problem was fixed. Again, silly me. So right as Michael walks through the door and I'm getting dinner together, the damn thing starts up again, in the middle of a rain storm. Yes. We decided that we couldn't let this wait until the next morning, so we crawled up on the roof with tarps and bricks while the rain was falling in sheets. We were both completely soaked in 5 minutes. We got it done though and thought that had solved the problem. I bet you can't guess what happened next? Thats right! Two hours later it started again. At this point, we put a pot under the fan and surrendered. I will call the roofer again today.
Back to the dinner though, it was amazing! I am a mushroom lover and this totally appealed to me. Fat and mushrooms and egg noodles? Bring it on! Michael is a lover of comfort food, so he was also thrilled. I'm not going to lie, there was a good 5 minutes of silent chewing as we each reveled in good food and not being on the roof anymore. The most amazing part? The recipe is super easy and only took 30 minutes to make! This meal is definitely going to be added to the regular roster from here on out. I can envision an entire line-up of shepherds pie, meatloaf, pot roast, stew and stroganoff. Mmmmmm mmm I can almost hear myself getting fatter.

Mushroom Stroganoff
2 Tbsp Butter (or olive oil)
1 Medium Onion
4 cloves garlic
1 1/2 lb Mushrooms (Porcini, button, etc.)
1 1/2 tsp paprika
1 tsp nutmeg
Salt and pepper to taste
1/2 cup Beef Broth
1/2 cup white wine
1 Tbsp balsamic vinegar
8oz Sour cream or creme fraiche
3 Tbsp Flour
2 Tbsp Butter (or olive oil)
1 Medium Onion
4 cloves garlic
1 1/2 lb Mushrooms (Porcini, button, etc.)
1 1/2 tsp paprika
1 tsp nutmeg
Salt and pepper to taste
1/2 cup Beef Broth
1/2 cup white wine
1 Tbsp balsamic vinegar
8oz Sour cream or creme fraiche
3 Tbsp Flour
Chop onion and saute in butter on medium heat until soft. Add garlic and saute for another 5 minutes. Chop mushrooms and add to the onions and garlic. Add paprika, nutmeg, salt and pepper and saute on high heat for 10 minutes (if the pan looks too dry or things are sticking, add a little more butter or oil).
Add wine, broth and vinegar to pan, bring to a simmer, and then reduce heat to medium. Cook for 5 minutes. Add sour cream, stirring to mix well. Add flour by gently sifting into pan, mix to eliminate clumps. Once the mixture thickens, reduce heat to low to keep warm, or off to serve.
This is delicious served on top of pappardelle pasta and garnished with parsley.
Enjoy!
